Once a wheel of cheese carries our label, it’s a seal proving its excellent quality. For 50 years, the name Koch has been synonymous with «Hand-Made Swiss Premium» – for select, fine, individual and great cheese enjoyment. We call it «Tailor-Made Cheese» – meaning top-quality ingredients and products, absolute carefulness and deliberation, true craft made by hand, and pure heartfelt passion. And of course the most important thing for us in all we do – the people who make it all happen. Without them, it would all be just another cheese.

Kevin is entrepreneur, affineur, cheese sommelier – refining cheese with often unconventional, sometimes nearly crazy ideas, a creator and visionary, a true stylist and sublime Créateur de Fromage. With traditional craftsmanship and creative ideas, he and his team of cheese designers are setting new accents in cheese refinement – tailor-made cheese creations, as unique and individual as they come. True cheese art with zeitgeist, often inspired by nature, or by trends he discovers and which trigger his creative vein.

For our unique Timberly, we have been inspired by the needles, woods, and aromas of the forest and created a beguiling blend: Aromatic and tart with a slightly bitter note and the wonderful smell of fresh, damp forest floor. The question remains: is it still an it-piece or already a classic?

We pamper our Montchic OT with red cultures while it enjoys an extra long beauty sleep in a limestone cave. Once awoken, the wait has paid off: beautifully decorated with the first salt crystals in a smooth dough, it makes an impressive appearance with its spicy, strong aroma.

In our ESSENCIA collection, we have been completely inspired by the green world of plants this time. A dress woven from an extract of hemp leaves, hemp nuts and hemp oil that leaves a tart yet refreshing taste experience on the tongue. A pleasure experience where the unique taste can be sensually experienced again and again.

We are very attached to our home region, that’s why we have always preferred short distances for transport, and that’s why we build and maintain true friendships – with people who, just like us, assume responsibility and who develop new ideas together with us in tune with nature. We also believe in «bio», i.e. in organic food practices – but not for its own sake.

Truly perfect indulgence comes from carefully selecting the best wheels of cheese and providing them with just the right measure of personal attention. We know that «Haste Makes Waste», which is why give our cheeses lots of time to mature. Down here in our mine, the climatic conditions are ideal. It’s down here that we turn, salt, brush, and check each individual wheel of cheese, thus creating our «Tailor-Made Cheese», preparing them to go out into the limelight and be celebrated on the red carpets of the gourmet world.
