Only the combination of know-how and innovation enables us to make everything we do with such care that we are content with the final result, that we can be proud of what we’ve created. This pride is the hallmark of a truly unique creation.

Our Supply Chain Consists of Years of Trust and Confidence.

 

Starting with our dairy farmers who live and work around Gonten, who together with us have been safeguarding the quality of their milk. Everything related to animal husbandry, feeding, animal welfare, and sustainable production is very close to their heart. Their quality milk is permanently being tested by our master cheese makers and optimized time and again in coordination with us and with the farmers.
And only when all concerned act according to their hearts and to their minds will the result satisfy us all. The good thing about it is that everyone takes on responsibility for their own part, but we still think and act as a community.

We Don’t Have Suppliers. Only friends!

 

Let all the others have suppliers and maintain business relationships. We call those with whom we’ve been working together for years: friends. And as a result from this long-standing friendship and the joint responsibility for quality we derive hand-made, tailor-made products with extraordinary taste. Cheese specialities with exactly those ingredients that make them so unique.

«Tailor-Made Cheese» with the added plus of personal relationships, regional focus, short distances, and sustainable concepts. One of our oldest and most loyal friends is Hans – our master cheese maker.

Refining Cheese Until Its Perfection

 

Refining cheese – what the French call affinage – is the high class of cheese making; and for us, it is familiar craftsmanship, working hand in hand. Here, Kevin and Dominik are applying the decisive kick to «Braukunst» [the art of brewing], our «Craftprotz» [muscle craftsman], using a craft beer with a decidedly roasted aroma. It gives the cheese a special taste, and lends the rind an incomparable ebony shine. For the perfect product that we want, careful procedures are essential – just like continuous quality monitoring.

For us, cheese making still is true craftsmanship – made by real people and friends, like Alfred, who has learned the trade of cheese refining and who is a passionate advocate of it. We know: only by making each cheese by hand, letting it mature naturally, turning it over ourselves, caring for it and checking it regularly, will it gain its unique taste and character and will finally turn into our «Tailor-Made Cheese» that we’re so proud of.

We from Koch live for the best cheese, and here in the Appenzell region, we find everything necessary for a really good cheese and taste: intact nature which we protect, and like-minded people who together with us fill our claim to premium quality with life.
